El Salvador coffee is some of the best in the world. The unique climate, tropical and humid, but with high altitude and rich soil volcanic slopes is not like many places on earth. If you ever have the opportunity to try the coffee there, you just cannot go back to regular store blends.
This is a single origin coffee. Generally when that term is used, it can mean a single region, different farms. In this case, its one very specific farm. This is a very special batch, which we worked on for a year. This batch was rated a cupping score of 86 which on a scale of 1-100 is very high. Only specialty coffees generally score over an 80, while most regular store brands are around a 60. A cupping score accounts for various factors such as body, acidity, balance, aroma and flavor.
This is a strictly high altitude coffee. When coffee plants grow at high altitude, they grow more slowly which is less profitable for producers as there are more infrequent harvests. The beans of a high altitude crop have a lot richer and more complex flavor as they develop when compared with a cheaper, low altitude bean.
Tesoros Del Pais High Altitude blend from Achuapan, El Salvador is a light roast, high caffeine coffee in whole fresh roasted coffee beans . They are roasted in small batches to ensure the freshest product and an unbelievable aroma.

These are raw, green coffee beans. They aren't roasted. If you try to brew them green, it will taste like earthy water. Some people kind of like this, but its not the conventional way most people consume coffee. When coffee beans are raw, they are a greenish/yellowish color. They're also very hard and would be difficult to grind. Different coffee drinkers have their own preferences on how to roast them. We imagine most consumers of these beans would roast them.
We at Tesoros have tried this particular crop at different roast levels, and found a light roast, right after second crack, to be excellent. The flavors you will get out of a light roast is a stone fruit, red grape, citrusy, acidic taste. It is also high in caffeine comparatively to other beans. You will notice. These are fresh, Fall 2022 harvest
Most of the beans on the farm where these come from are Bourbon variety, but there is some Costa Rica 95, Pacamara, and Geisha in this blend. The flavors of the beans come from the sunlight exposure, moisture, soil composition, and nutrients. This farm is like heaven, a sun drenched mountain top with light morning rains, hot afternoons, cool breezes in the evening. You can taste this in the beans.
Honey washed and non honey washed, and packed in 3 and 5 lb vacuum bags. They're both processed at the same facility, but the honey washed ones have a bit of pulp left on them during the drying process. This leaves on a little bit of extra natural sugar. If you're a professional roaster, its fun to experiment with various drying and preperation beans to see what kind of flavors you can get on different roast levels. We have had great feedback with these beans.
Green coffee beans last for a long time, they start to degrade in flavor and smell after roasting. Still, tempature and moisture aren't friends of the beans, so we keep them grainpro sealed until we portion them out, and then we vaccum seal them so they have minimum air exposure before they get to you.
